Easy Orange Parfaits

Ingredients

  • 1 pkg. of vanilla pudding mix, 4-serving size
  • 1-3/4 cups Florida's Natural® Brand orange juice
  • 1 8-oz. container vanilla or pineapple yoghurt
  • 3/4 cup coarsely crushed gingersnaps and/or chocolate wafer cookies
  • Orange peel (optional)
  • Fresh mint sprigs (optional)

Instructions

  1. Prepare pudding mix according to package directions, except use the orange juice instead of milk. Transfer pudding to a bowl.
  2. Cover surface with plastic wrap and chill thoroughly.
  3. Before serving, fold yoghurt into pudding.
  4. Divide one third of pudding mixture among 6 glasses.
  5. Spread with half of the crushed cookies.
  6. Repeat pudding and cookie layers.
  7. Top with remaining pudding mixture.
  8. Garnish with orange peel or mint sprigs.
